Southern Candied Sweet Potatoes

Southern Candied Sweet Potatoes... another great sweet potatoes recipe !

INGREDIENTS

* 6 large sweet potatoes
* 1/2 cup butter
* 2 cups white sugar
* 1 teaspoon ground cinnamon
* 1 teaspoon ground nutmeg
* 1 tablespoon vanilla extract
* salt to taste

INSTRUCTIONS

1. Peel the sweet potatoes and cut them into slices.
2. Melt the butter or margarine in a heavy skillet and add thesliced sweet potatoes.
3. Mix the sugar, cinnamon, nutmeg and salt. Cover the sweet potatoes with sugar mixture and stir. Cover skillet, reduce heat to low and cook for about 1 hour or until potatoes are "candied". They should be tender but a little hard around the edges. Also the sauce will turn dark. You will need to stir occasionally during the cooking. Stir in the vanilla just before serving. Serve this great sweet potatoes recipe hot. Enjoy it with friends ! Nice one !

Sweet Potato Souffle...another great sweet potatoes recipe to try ! A nice one !

INGREDIENTS

* 3 cups mashed sweet potatoes
* 3/4 cup white sugar
* 1/3 cup butter, softened
* 2 eggs
* 1 teaspoon vanilla extract
* 1/2 cup milk
* 1 cup flaked coconut
* 1/3 cup all-purpose flour
* 1 cup packed brown sugar
* 1 cup chopped walnuts
* 1/3 cup melted butter


INSTRUCTIONS

1. Preheat oven to 350 degrees F (175 degrees C).
2. Combine the mashed sweet potatoes with the white sugar, soft butter or margarine, beaten eggs, vanilla and milk. Spoon into a 2 quart oven proof baking dish.
3. Combine the coconut, flour, brown sugar, chopped nuts and melted butter. Sprinkle over the top of the sweet potatoes.
4. Bake at 350 degrees F (175 degrees C) for 30 to 35 minutes. This nice sweet potatoes recipe is ready to serve...nice one ! Enjoy !

Sweet Potato Pound Cake

INGREDIENTS

* 1 cup butter, softened
* 2 cups white sugar
* 2 cups cooked and mashed sweet potatoes
* 1 teaspoon vanilla extract
* 4 eggs
* 3 cups all-purpose flour
* 2 teaspoons baking powder
* 1 teaspoon ground cinnamon
* 1/2 teaspoon baking soda
* 1/2 teaspoon ground nutmeg
* 1/4 teaspoon salt
* 1 cup sifted confectioners' sugar
* 5 teaspoons orange juice
* 2 tablespoons grated orange zest


INSTRUCTIONS

1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10 inch tube pan. Sift together flour, baking powder, cinnamon, baking soda, nutmeg and salt. Set aside.
2. In large mixing bowl, cream butter and sugar until light and fluffy. Add mashed sweet potatoes and vanilla. Beat until well blended. Add eggs, one at a time (the batter will look curdled). Add flour mixture to potato mixture. Beat on low until combined.
3. Pour batter into 10 inch tube pan. Bake at 350 degrees F (175 degrees C) for about 1 hour and 20 minutes, or until a wooden toothpick inserted into cake comes out clean. Cool cake for 20 minutes in the pan, then invert onto serving plate.
4. To make the glaze: in a small bowl, combine confectioners sugar with 3 to 5 teaspoons orange juice to achieve drizzling consistency. Spoon over warm cake and sprinkle with orange zest if desired. This nice sweet potato pound cake is ready to serve. Enjoy the feasts !

INGREDIENTS

* 1 (1 pound) sweet potato
* 1/2 cup butter, softened
* 1 cup white sugar
* 1/2 cup milk
* 2 eggs
* 1/2 teaspoon ground nutmeg
* 1/2 teaspoon ground cinnamon
* 1 teaspoon vanilla extract
* 1 (9 inch) unbaked pie crust

INSTRUCTIONS

1. Boil sweet potato whole in skin for 40 to 50 minutes, or until done. Run cold water over the sweet potato, and remove the skin.
2. Break apart sweet potato in a bowl. Add butter, and mix well with mixer. Stir in sugar, milk, eggs, nutmeg, cinnamon and vanilla. Beat on medium speed until mixture is smooth. Pour filling
into an unbaked pie crust.
3. Bake at 350 degrees F (175 degrees C) for 55 to 60 minutes, or until knife inserted in center comes out clean. Pie will puff up like a souffle, and then will sink down as it cools. The sweet potato recipe is ready to serve. Nice one ! Enjoy it !
