SWEET POTATO HONEY BALLS

SWEET POTATO HONEY BALLS ...another great sweet potatoes recipe....a nice one !

INGREDIENTS
  • 2 1/2 c. cooked sweet potatoes
  • 3/4 tsp. salt
  • Dash of pepper
  • 4 tbsp. butter
  • 1/2 c. miniature marshmallows
  • 1/2 c. honey
  • 1 c. pecans, chopped
INSTRUCTIONS
Cook and mash sweet potatoes. Combine potatoes with salt, pepper and 2 tablespoons butter. Stir in marshmallows until well mixed; then chill. Shape into balls using 1/4 cup potato mixture for each.
In a small heavy skillet combine 2 tablespoons butter and 1/2 cup honey. Add potato balls one at a time. Using 2 forks to make handling easier, coat each potato in chopped pecans. Place in
greased shallow baking dish. Drizzle with remaining butter. Bake at 350 degrees for 15-20 minutes. The sweet potatoes recipe is ready to serve...amazing ! Enjoy it with friends !

INGREDIENTS
  • 3 c. cooked, mashed sweet potatoes
  • 1 stick butter, melted
  • 1 1/4 c. sugar
  • 3 eggs
  • 1 sm. can evaporated milk
  • 1 c. coconut
  • 1 1/2 c. mini-marshmallows
  • 1/2 c. nuts

INSTRUCTIONS
Combine sweet potatoes, butter, sugar, eggs and milk. Add coconut, marshmallows and nuts. Bake in 350 degree oven for 45 minutes. The sweet potatoes recipe is ready...nice taste ! Enjoy it !

SWEET POTATO CRISP ....try this nice sweet potatoes recipe.....!

INGREDIENTS
  • 3 c. cooked, mashed sweet potatoes
  • 3/4 c. sugar
  • 3/4 c. brown sugar (dark)
  • 1 tsp. baking powder
  • 1 tsp. vanilla
  • 1/4 tsp. salt
  • 1/2 c. soft butter
  • 4 eggs
INSTRUCTIONS
Beat eggs until lemon colored. Put in all ingredients and place in a buttered baking dish. Bake at 350 degrees until set (about 30 minutes). Remove from oven and cover with topping. Return to oven for about 20 minutes.

TOPPING:
  • 4 oz. butter, melted
  • 3 c. corn flakes, slightly crushed
  • 1/2 c. brown sugar
  • 1/2 c. chopped walnuts
  • 1/2 c. chopped pecans
Mix all ingredients together and spoon on top of sweet potato mixture when it is called for. The sweet potatoes recipe crisp is ready to serve .. ! Enjoy it !

INGREDIENTS
  • 2 baking size sweet potatoes
  • 1 tbsp. flour
  • 1/2 tsp. salt
  • 1/4 grated whole nutmeg
  • 1 1/4 c. sugar
  • 1 c. water
  • 1 stick butter
INSTRUCTIONS
Peel potatoes and cut into small pieces. Place in a deep dish.
Combine sugar and flour and add to sweet potatoes along with water, salt and nutmeg. Cut butter into pieces and lay over other ingredients. Cover with your favorite pastry. Bake at 350 degrees for 45 minutes or until done and crust is brown.The sweet potatoes recipe is ready to serve 6 great persons....enjoy the feasts ! Nice !

SWEET POTATO SOUP

INGREDIENTS
  • 6 lg. sweet potatoes
  • 2 sm. containers plain yogurt
  • 1 can chicken broth (College Inn brand)
  • 1 tsp. nutmeg
  • 1 lg. white onion
  • 3 tbsp. butter
  • 1 shot glass sherry

INSTRUCTIONS
Cook sweet potatoes, either in oven or microwave. Scoop sweet potato meat of each potato and place in food processor. Turn into puree; add chicken broth and yogurt to mixture.
Separately saute chopped onion in butter until clear. Add sweet potato mix and onion in large pot and heat until bubbles form on side. Then simmer for about 20 minutes.

Add sherry and nutmeg and simmer for another 15 minutes. Serve warm and in small quantities; it is very rich and even sweet potato haters will love this soup. The sweet potatoes recipe is ready to serve....enjoy the soup !

SWEET POTATO PUMPKIN PIE

SWEET POTATO RECIPES of PUMPKIN PIE

INGREDIENTS
  • 1 15 oz. can Libby’s pumpkin pie filling
  • 1 15 oz. can candied yams
  • 1/2 cup light brown sugar
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon salt
  • 1/2 cup coconut milk
  • 2 tablespoon melted butter
  • 2 large eggs
  • 1 refrigerated pie crust
  • 3 tablespoon Myer's Rum

INSTRUCTIONS
Preheat oven to 350°F.
In the bowl of a food processor, combine pumpkin pie filling, candied yams (undrained), sugar, spice, salt, coconut milk, butter and eggs and process until smooth.
Fill a 10-inch pie crust with the mixture.
Bake for 1 1/2 hours.
Remove from the oven and set aside for at least 20 minutes before serving. Better when chilled.The sweet potatoes recipe with pumpkin is ready to serve....great taste ! Enjoy !

SWEET POTATOES WITH PINEAPPLES AND MARSHMALLOWS

INGREDIENTS
  • 2 cans of yams or fresh sweet potatoes
  • 1 can crushed or diced pineapples in juice
  • 1 bag mini marshmallows
  • brown sugar to sweeten, add to your liking
INSTRUCTIONS
Start by adding the sweet potatoes to the casserole dish of your choice. In a separate bowl, mix the pineapples and brown sugar until the mixture is thick, but not too thick, as this will need to be mixed with the rest of the ingredients.
Once you have mixed the brown sugar and the pineapples with the sweet potatoes, add the bag of marshmallows (or as much as you prefer). Mix all.
Be careful not to mash the sweet potatoes while mixing all together.
Preheat oven to 350°F and bake for 30 minutes or until golden brown. Enjoy!
